• 1 bunch kale (1 or 2 bunches kale. leaves only, chopped, and stems removed)
  • 2 Asian pears (or any kind of apple or pear)
  • 3 c cucumbers (chopped)
  • 2 red onions (small ones, diced)
  • 1⁄2 lemon (squeezed onto salad)
  • 1⁄4 c olive oil (or other oil)
  • 1 Tbsp balsamic vinegar (or any kind of vinegar)
  • salt & pepper (to taste)


Preparing this salad is quick and easy! To get started, simply drizzle olive oil onto the raw kale leaves. Using clean hands, massage the olive oil throughout. Squeeze well between your hands, almost like kneading bread dough, for a good 1 – 3 minutes. When the leaves are dark and wilted, add the chopped Asian pears, cucumber and diced red onions. Toss. Add remaining ingredients & toss.
