INGREDIENTS:

  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • 1 tsp jalapeno (minced)
  • 2 Tbsp red onion (minced)
  • 1 grapefruit (peeled, membrane removed, sectioned, and chopped)
  • 1 tsp cardomom (ground)
  • 2 Tbsp cilantro (chopped fresh leaves)
  • 1⁄2 red bell pepper (minced)

DIRECTIONS:

Toss all ingredients together. Serve chilled as a side dish to barbecued meat, seafood or nachos.
