Tostadas
I personally love meals that are fun, versatile and customizable. This cool recipe can be made with things that you will find in the bags distributed by OHSNAP on campus. The word “Tostada” is Spanish for “toasted” and is the name of a Mexican dish that is served on a toasted or deep fried corn tortilla. The tostada (tortilla) is the base of the recipe and can be topped with refried beans, cheese, meat, lettuce, and other toppings.
Ready in 20 minutes
Serves 4 people
Ingredients
- 8 Tostada shells (store bought)
- 1 can of refried beans (pinto or black beans)
- 1 cup of cheese
- Meat: any type of meat or seafood you like, or leftover meat you have.
- Lettuce: shredded very thinly.
- Avocado: ripe, thinly sliced or chopped, or substitute guacamole.
- Cheese: cotija a traditional Mexican cheese, if you don’t have any on hand shredded cheese will work.
- Sour cream or Mexican crema.
- Hot sauce: valentina or cholula, if desired.
- Cilantro for garnish
Preparation
- 1. Bake store bought tostada shells at 400°F for 5 minutes and then flip and cook for 5 minutes more.
- Cook ground beef (optional )and onion. Add ground beef to a skillet over medium heat. Cook, breaking into small pieces with a wooden spoon, until browned. Remove grease. Add onion and seasonings and cook an additional few minutes.
- Warm refried beans. Add the refried beans to a skillet over medium heat. Stir in a small scoop of sour cream and add ½ cup of cheese(optional). Cook until warmed through.

- 4. Assemble the tostadas. Spread a thin layer of refried beans on the tostada shell. Top with a small spoonful of ground beef, then lettuce, cheese, avocado, salsa, sour cream and hot sauce.
- Serve immediately. And Enjoy.
