• 3⁄4 lb carrots (peeled and shaved with a vegetable peeler, or grated)
  • 1 Tbsp olive oil
  • 1⁄2 tsp lime zest (grated from the lime’s peel)
  • 1 Tbsp lime juice (squeezed from the same lime)
  • 2 Tbsp rice vinegar (or other vinegar, if you don’t have this kind)
  • 1 Tbsp sesame seeds (optional)
  • 4 green onions (thinly sliced )
  • salt and pepper (to taste)


In a bowl, combine all ingredients. Season with salt and pepper and toss to combine.
