INGREDIENTS:
- 3⁄4 lb carrots (peeled and shaved with a vegetable peeler, or grated)
- 1 Tbsp olive oil
- 1⁄2 tsp lime zest (grated from the lime’s peel)
- 1 Tbsp lime juice (squeezed from the same lime)
- 2 Tbsp rice vinegar (or other vinegar, if you don’t have this kind)
- 1 Tbsp sesame seeds (optional)
- 4 green onions (thinly sliced )
- salt and pepper (to taste)
DIRECTIONS:
In a bowl, combine all ingredients. Season with salt and pepper and toss to combine.
